CHEF’S INFORMATION

Chef

Keisuke Ukibe

While studying at University, he worked part-time at an Italian restaurant and after graduating joined full-time. Later he dove into Spanish cuisine, working at restaurants in Ginza and Kagurazaka before moving to San Sebastian in the Basque region, working and sampling the food culture at its origin. After returning to Japan he was drawn to wine, and trained as a sommelier. Now in Kyoto, he is pursuing the perfect blend of Spanish food and Kyoto ingredients, wines and Sake.
